
This delicious recipe comes from Enduro Bites ambassador Anne Galyean. These carbohydrate-rich scones are ideal as a pre-workout snack to fuel long, hard training days. They also make for tasty treats during extended workouts. For Anne this usually means shredding gnarly mountain trails.
Ingredients
- ⅓ cup sugar
 - 1 teaspoon baking powder
 - ¼ teaspoon baking soda
 - 1/4 teaspoon ground salt
 - 8 tablespoons unsalted butter, cold
 - 2 medium apples (diced)
 - 2/3 cup plain Greek yogurt
 - 1 large egg
 - 2/3 cup Beta Red Orange
 - 1 tablespoon lemon zest
 - 2 cups flour
 
Directions
- Mix dry ingredients in bowl.
 - Dice cold butter and blend with dry ingredients until mealy consistency.
 - Mix combined yogurt and whipped egg into dry ingredient. Moisture will be tacky.
 - Mix in diced apples.
 - Form into inch thick forms.
 - Top with lemon zest.
 - Bake for 15 minutes at 400°F.
