With Beta Red as the secret ingredient, my Chocolate Orange Cardamon Cookies are great before and during workouts.
Ingredients
2 T cacao powder
2 T Beta Red Orange
1 Tsp orange zest
1/4 tsp baking soda
1 T unsweetened apple sauce
1 T maple syrup or honey
1/4 tsp cardamon
3/4 C gluten-free flour (add xanthan gum if not in mix - I used homemade sorghum/almond)
1/4 C milk of choice
Optional - sea salt to top
Preparation
Pre-heat oven to 350 degrees.
Cover baking sheet with parchment paper to make cleanup easier.
In mixing bowl, mix all dry ingredients.
Add all wet ingredients except milk.
Mix well, then slowly add milk until the batter starts to stick together. You may not need all the milk as you don’t want the dough to be sticky.
When batter comes together, roll into small balls then put on parchment paper.
Smash the cookie balls down to about half inch thick. If you choose to keep them as balls, or make them thicker, keep in mind a longer cook time will be necessary.
If desired, here is where you sprinkle a pinch of sea salt on top.
Bake for 12-15 minutes, cookies should start to firm up but still have a little give in the middle (just a little).

The recipe yields 6-8 cookies.
